what is a macrobiotic diet

Traditional Macrobiotic advice recommends that one-third of your plate should be vegetables, some leafy greens, a little beans, and maybe a pudding (don't worry, no sugar is used).

I strongly recommend that you only purchase vegetables of Organic origin. Non-organic vegetables are sprayed with pesticides, herbicides and fertilizers. These are harmful to your health.

I know that organic vegetables cost more than others but products such as the glyphosate pesticide are frequently sprayed on crops, and they are dangerous. They cause serious health problems, and if we remember that most diseases start in the liver, it is just not worth eating "chemical" vegetables.

In 98% of cases, cancer is caused by a virus. A virus needs food to eat to grow strong and stay alive. This food is provided by the toxins that you accumulate daily in your body:

  1. From a bad diet
  2. Toxic heavy metals such as mercury, lead, copper, arsenic, aluminium, nickel, cadmium, etc... 
  3. Plastics, radiation, chlorine, fluoride, pesticides, herbicides, fungicides, cleaning solvent, etc...

We cannot avoid the last two as they are present in the air we breathe and our food.

Current macrobiotic advice does not include a way to get rid of toxic heavy metals and other toxins. This is a mistake that I have remedied in my consultation.

If you suffer from a degenerative disease such as cancer, heart problems, diabetes, etc... some of these are best avoided.

Blanched vegetables

Macrobiotic Diet recipe with blanched vegetables.

Only boil for a few seconds. Very maximum one minute.

Use a mixture of leafy, round and root vegetables.

Keep changing the selection of vegetables you use.

Recipe:

  1. In a saucepan, add a pinch of salt to several inches of filtered or spring water
  2. Bring to a boil
  3. Add some green leafy vegetables that you have previously cut to manageable size and boil for a few seconds
  4. Remove and place in a plate
  5. Add your next vegetables and repeat the above
  6. Add a third and fourth vegetable if desired 

Vegetable suggestions:

  • Chinese cabbage, radish and onions
  • Cabbage and watercress
  • Broccoli, cauliflower and carrots
  • Whatever you fancy

Seasoning - one of those:

  • Add a small amount of shoyu
  • Add a few drops of Umeboshi vinegar 
  • Add a few drops of Rice vinegar
  • Add a few drops of apple cider vinegar
  • Dilute some miso with some of the cooking water and use the paste for seasoning

For maximum health benefits do not use commercial seasoning

Nishime

Macrobiotic Diet recipe for Nishime.

This entails a mixture of roots and round vegetables steamed with kombu sea vegetable and a little water.

It is cooked in a pot with a heavy lid (such as Le Creuset).

Try one of the following combination of vegetables when cooking Nishime style (don't forget your 1" square kombu sea vegetable):

  • Carrots with cabbage (or lotus root) and burdock
  • White radish with shitake mushrooms
  • Onion with pumpkin
  • Leek and carrots

Cook It:

  1. Soak a 1" square  piece of kombu sea vegetable until soft
  2. Discard the water and place in your heavy lid pot
  3. Cover with filtered or spring water (do not use tap water)
  4. Cut and place your vegetables in the pot
  5. Add a little sea salt or shoyu to season (shoyu is a soya bean paste with no sugar added and gluten free)
  6. Cover and bring to the boil then reduce to a low flame
  7. Add some water to the pot when necessary 
  8. Nishime is ready to eat when the vegetables are soft
  9. Taste, and if necessary add a little drop of shoyu & mix thoroughly

Fried Tofu And Vegetables

Macrobiotic Diet Recipe with Tofu and vegetables.

Tofu dictionary definition:

"A soft, white food made from soybeans and often used in vegetarian cooking instead of meat" 

A thorough analysis of twenty-eight studies on Chinese adults has shown that the absorption of tofu reduces the risk of at least one cancer type (stomach cancer) than intake of soy in general.

Recipe

  • Press half block of organic tofu to remove the water and slice
  • Heat some sesame oil in a frying-pan (do not use a non-stick saucepan)
  • Add the slices of tofu and deep-fry until golden brown on both sides
  • Place on paper to drain
  • Slice the tofu into strips
  • Add some water to a pan and add some shoyu (natural soya sauce), and the tofu
  • Simmer for 10 minutes
  • Heat the frying-pan on a high flame and add a little oil
  • Sauté the following vegetables quickly until they are bright and crispy starting with the Chinese cabbage then some cooked peas and finely cooked corn
  • Add the tofu and mix with the vegetables.
  • Season with shoyu and ginger juice

Pumpkin, Adzuki beans and Kombu

Macrobiotic Diet recipe with Pumpkin, Adzuki beans and Kombu.

Adzuki beans (also spelt aduki or azuki) are my favourite beans. Cook them until soft, and they will melt in your mouth.

They taste slightly sweet to me, but I have not had sugar for many years.

Adzuki beans help intestinal transit.

  • Soak one cup of organic adzuki beans for three to five hours
  • Soak a 1" square piece of dried kombu for five minutes  
  • Cut the kombu into smaller pieces
  • Add the kombu and two cups chopped pumpkin to a pot
  • Add the adzuki beans on top of the squash
  • Add water to the pot, and cook on a low flame for about one hour, or until the beans and pumpkin become soft 
  • Make sure you don't run out of water. The beans should be covered during the cooking
  • Add a pinch of sea salt towards the end of the cooking 
  • Turn off the heat and let it rest for 10 minutes before eating

Macrobiotic Diet Recipe with beans.

Best cooked in a pressure cooker, otherwise, use a pot with a heavy lid.

Recipe:

  • Soak a 1" square piece of dried kombu for five minutes  
  • Cut the kombu into smaller pieces 
  • Add the kombu and 2 cups of white beans (navy beans OK) to a pot
  • Cover with water 
  • Cook until soft (approximately 50 minutes). Make sure you don't run out of water
  • Add a little sesame oil to a frying-pan and heat it
  • When hot, add the onion, a little sea salt and cook for a couple of minutes
  • When ready, mix the beans and onion together in a separate bowl
  • Add the parsley and a bit of umeboshi vinegar (organic apple cider vinegar could also be used)
  • Mix the lot, let it cool down a bit and serve

Macrobiotic Diet Recipe With Pumpkin, Adzuki beans and Kombu.

This is my favourite bean recipe.

If red lentils are used, this can turn into lentils, carrot, onions pate... Delicious and ideal for snacks.

  • Soak a 1" square piece of dried kombu for five minutes  
  • Cut the kombu into smaller pieces
  • Add the kombu and 1 cup of lentils to a pot
  • Add 2 cups of squash that has been cut into manageable pieces
  • Cover with spring or filtered water
  • Bring to the boil and cook the lentils are soft (depending on the lentils you use this will vary from 20-60 minutes)
  • Make sure you don't run out of water
  • When cooked, add a little shoyu (gluten and sugar free soya sauce) to season
  • Simmer for a few more minutes
  • Serve with scallions

Tofu cheesecake

Macrobiotic Diet Recipe for Tofu Cheesecake.

Macrobiotic Tofu Cheesecake
Make sure your pie shell is NOT non-stick

Tofu dictionary definition:

"A soft, white food made from soybeans and often used in vegetarian cooking instead of meat".

Ingredients 

Choose organic ingredients whenever possible.

The Crust:

  • 1/3 cup of honey
  • 2 cups of gluten free flour
  • 1/4 cup of olive oil
  • 1/2 teaspoon of sea salt 
  • Thoroughly mix the lot to form a dough (add a little water if too thick)

The Filling:

  • 1 lb (450 grams) of extra hard organic tofu
  • 1/3 cup of honey
  • 1 tablespoon of organic vanilla 
  • 1/4 cup of tahini
  • 1/2 cup of either cranberries, raspberries or strawberries  jam unsweetened (use St Dalfour jam)
  • zest of one lemon grated (this has to be organic)
  • Blend the lot in a food processor 
  • Add a little water if too dry

Recipe

  • Preheat your oven to 350 degrees 
  • Lightly oil the bottom of a pie shell
  • Press "The crust" to cover the bottom and sides of the pie shell
  • Poke some holes in the paste 
  • Bake in the oven for 10 minutes
  • Remove from the oven and add "The Filling"
  • Decorate the top with fresh berries of your liking 
  • Bake at 350 degrees for 15 minutes or until the tofu mixture is golden brown 
  • Remove from oven, allow to cool down and enjoy

Macrobiotic Diet Recipes for Tarte Tatin

Tarte Tatin

The Crust

  • 1/2 cup of honey
  • 2 cups of gluten-free flour
  • 1/4 cup of olive oil
  • 1/2 teaspoon of sea salt 
  • Thoroughly mix the lot to form a dough

The Filling

Use organic ingredients if you can. Your body will thank you for this.

  • 4 peeled and sliced apples
  • One pinch of salt
  • 1 tablespoon of deodorized olive oil 
  • 1/2 cup of brown rice or barley malt syrup

Recipe:

  • Preheat the oven at 350 degrees 
  • Press "The crust" to cover the bottom and sides of a pie shell (do not use a non-stick pie shell)
  • Poke some holes in the paste 
  • Bake in the oven for 10 minutes
  • Remove "The Crust" from the oven and add the following  "Filling"
  • Thoroughly mix the syrup with the oil and the apples, and carefully add on top of "The Crust" 
  • Place in the oven and cook until the apples turn brown and caramelized (about 25 minutes) - keep an eye on it
  • Allow cooling for a few minutes  before serving

Macrobiotic Diet Recipes: Carrot Cake

Carrot cake

Ingredients 

Use organic ingredients if possible

  • 2 cups of gluten free flour 
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon of baking powder
  • 1/2 teaspoon salt
  • 1/2 cup of dry raisins soaked
  • 1/2 cup of olive oil
  • 1/2 cup unsweetened almond milk
  • 2/3 cup of honey
  • the rind from one orange or lemon - make sure it is organic, if not skip this
  • 2 cups of finely shredded carrots
  • 1/2 a cup of grinded almonds

Recipe

  • Pre-heat the oven to 350 degrees
  • Thoroughly mix the carrots with the flour
  • Mix the following together: cinnamon, nutmeg, baking powder, salt, raisins, orange (or lemon) rind and almonds  
  • Mix the oil, rice milk, brown rice syrup separately
  • Mix both together 
  • Add a little oil to your cake pan and add the above mixture to your pan
  • Bake until brown and beginning to detach from the sides of the cake pan  (about 40 minutes) 

Macrobiotic Diet Recipes: Sweet Kuzu

Macrobiotic Diet Recipes with Kuzu.

Kuzu is sometimes also spelt Kudzu is a fast-growing Chinese and Japanese climbing vine of the legume family, now widespread in the southern U.S.

It can be used as a thickening agent in place of cornstarch or arrowroot powder

Benefits of Kuzu:

  • reduce high blood pressure
  • help heal the organs damaged by alcoholism
  • relieve chronic migraines 
  • reduce the risk of blood clots
  • lower cholesterol
  • ease aches in the shoulders and neck 
  • protect against heart disease

Recipe

  • Dissolve 1 tablespoon of kuzu in a small amount of filtered or spring water
  • Place in a saucepan
  • Add 1 cup of filtered or spring water
  • Add 1 tablespoon of brown rice syrup or barley syrup
  • Stir over a medium flame until it thickens
  • Allow to cool a bit and enjoy
